Pork and Peanut Ramen Noodles
Next time you want to make ramen at home, grab the noodles, toss aside the pre-made seasoning, and make this recipe. The ground pork, egg, and homemade sauce elevate this ramen (for under $25) to not only fill you up, but satisfy the desire for comfort food.

- 1/3 cup chili garlic sauce
- 1/3 cup soy sauce
- 1/4 cup water
- 1/4 cup brown sugar
- 2 tablespoons peanut butter
- 1 tablespoon ground ginger
- 1/2 pound ground pork
- 2 packages ramen noodles, seasoning packet removed
- 1 tablespoon scallion whites, sliced
- 1 tablespoon vegetable oil
- 1/4 teaspoon salt
- 1/2 cup unsalted peanuts, chopped
- 1 chili pepper, diced (optional)
- 1 tablespoon scallion greens, sliced for garnish
- 1 soft-boiled egg
- Combine sauce ingredients and set aside. Preheat 1 tablespoon vegetable oil in a skillet over medium heat, 4-5 minutes. While the skillet is heating, bring water to a boil in a small saucepan. Lower saucepan heat to simmer. Add one egg and simmer for 6-½ minutes. Remove immediately to an ice bath for 2 minutes. Set aside.
- Sauté scallion whites in the skillet for 1 minute. Add ground pork and cook until browned, breaking up with a spatula as it cooks, 7-8 minutes.
- While the pork is cooking, make noodles according to packaging instructions, then drain (do not use seasoning packet).
- Once the pork has cooked through, add sauce, peanuts, and chili pepper (optional). Reduce heat to medium low and simmer for 3-5 minutes. Remove skillet from heat and add noodles. Toss to combine.
- Top with soft boiled egg, cut in half. Garnish with green scallions.
