Ingredients

Tennessee Home-Style Tomato Sauce (4.5 cups)
  • 2 1/2 (15 oz) cans tomatoes with juice
  • 1 cup beef broth
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 1/4 cup crushed garlic
  • 1/2 cup red wine vinegar
  • 1/4 cup brown sugar
  • salt and pepper to taste
Lemon Garlic Butter Sauce (1 cup)
  • 1 stick salted butter
  • 3 cloves garlic, peeled and minced
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons freshly squeezed lemon juice
  • 2-3 tablespoons minced fresh parsley (optional)
Asian Soy Butter Sauce (1 cup)
  • 1 stick unsalted butter
  • 3 tablespoons toasted sesame seeds
  • 1 teaspoon minced garlic
  • 2 tablespoons minced green onion
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons soy sauce

Directions

Tomato Sauce
  1. Strain the tomatoes and their juice through a sieve into a saucepan, reserving the tomato solids.
  2. Bring to a simmer over medium heat and cook for 5 minutes. Add beef broth, stir and simmer for 3-4 minutes. In a blender or food processor fitted with a metal blade, purée onion, celery, bell pepper, garlic and tomato solids.
  3. Transfer to the tomato broth mixture and add wine vinegar and brown sugar, stirring well to incorporate all ingredients.
  4. Cover and simmer for about 15 minutes and salt and pepper to taste. Continue to simmer another 15 minutes, or until thick. Use immediately or cool to room temperature, cover and refrigerate for up to 1 week.
Lemon Garlic Butter Sauce
  1. The perfect grilling sauce for fish.
  2. Melt butter in a Cast Iron Melting Pot over medium heat. Add garlic, pepper, and optional parsley. Cook until the garlic is translucent, taking care not to let the garlic brown.
  3. Remove from heat. Add the lemon juice and stir.
  4. Carefully baste while grilling, but do not slather, as dripping butter can cause your fire to flare up. This sauce can be refrigerated, in a sealed glass container, for 1-2 weeks.
Asian Soy Butter Sauce
  1. Baste lightly on seafood, ribs, chicken,
  2. or vegetables.
  3. Melt butter in the melting pot over medium heat. Add sesame seeds, garlic, onion, and pepper.
  4. Cook until the garlic and onions are translucent but not brown. Add soy sauce and simmer for 2 minutes. Carefully baste while grilling, but do not slather, as dripping butter can cause your fire to flare up. This sauce can be refrigerated, in a sealed glass container, for 1 week.
