Sizzling Citrus Skirt Steak Tacos

Skirt steak is a favorite around here thanks to its big flavor and versatility. But a great cut of meat deserves an equally bold blend of spices. Enter: Lodge Sear Blends. This recipe features our Sizzling Citrus Sear Blend—specially crafted for high-heat cooking and not so shy on zingy, zesty flavor. We top it all off with a cool crema, fresh, crunchy slaw, plus a squeeze of grilled orange slices.

Ingredients

Steak Tacos

1½ pounds skirt steak
2 teaspoons salt
2 tablespoons Lodge Sizzling Citrus Sear Blend
1 orange, cut into wedges
8 flour tortillas
Sliced jalapeño, garnish
Chopped cilantro, garnish

Crema

½ cup sour cream
½ cup heavy cream
2 teaspoons Lodge Sizzling Citrus Sear Blend
Pinch salt

Slaw

1 cup purple cabbage, cut into strips
½ cup shredded carrots
2 green onions, trimmed and chopped
1 lime, juiced
2 tablespoons crema
2 teaspoons honey
1 teaspoon Lodge Sizzling Citrus Sear Blend

Directions

  1. Preheat Sportsman’s Pro Grill, bringing the grill to medium-high heat.
  2. While the grill is preheating, pat steak dry with paper towels, then season generously with salt and Sizzling Citrus Sear Blend. 
  3. Mix crema ingredients in a small bowl and refrigerate until ready to serve. Prepare slaw, combining lime juice, 2 tablespoons reserved crema, honey, and Sizzling Citrus Sear Blend in a small bowl. Toss together with cabbage, carrots, and green onion. Set aside.
  4. Oil the grill grates of the Sportsman’s Pro and sear steak for 2-3 minutes per side, or until desired doneness. Remove from grill and tent with aluminum foil.
  5. Set orange wedges and tortillas on the grill and cook until lightly charred, 1-2 minutes.
  6. Slice the steak against the grain and sprinkle with a little more Sizzling Citrus. Squeeze two of the charred lemon wedges into slaw and mix well.
  7. Assemble the tacos, with sliced steak, slaw, crema, and another squeeze of charred orange over prepared taco. Garnish with cilantro and serve.
