Lodge Paella

Crispy rice, fresh seafood, and classic spices are combined in just the right order to produce this vibrant and flavorful dish.

Nothing goes from stove top to table quite like an impressive dish of Paella. The aroma and colors of this meal encourage table guests to dig right in.

Ingredients

  • dozen mussels
  • dozen clams
  • 6 large scallops
  • dozen shrimp 
  • fresh cilantro
  • 2-4 cloves of garlic, minced
  • red bell pepper, cut into bite-sized pieces
  • green bell pepper, cut into bite-sized pieces
  • 1 cup asparagus, cut into bite-sized pieces
  • small onion, chopped
  • 10 oz. package yellow rice 
  • 3 tbsps olive oil
  • 1 tbsp butter

Preparation

  1. Sauté butter, garlic, onion and a portion of fresh cilantro, over medium heat until onions become translucent.
  2. Add 2.5 cups of water, olive oil, and yellow rice mix, to the onion mixture. Simmer for 12 minutes, while moving the pan around so that the rice cooks and absorbs liquid evenly. (You don't want to stir)
  3. After 12 minutes, the rice should be half-cooked, fold seafood and veggies into rice. Simmer another 12-15 minutes, until rice has absorbed the liquid and seafood is cooked. Don't stir the rice, but keep the pan moving to evenly cook everything. Fluff with a fork and garnish with fresh cilantro. Note that Paella usually forms a crust of toasted rice at the bottom.
