Cowboy Favorite Oven Fried Potatoes

The American version of "French" fries, these easy to prepare potatoes are a real crowd pleaser.

Ingredients

  • 10 medium new potatoes, skin on
  • 1/2 cup butter
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon chopped fresh parsley

Preparation Directions

  1. Preheat a large Dutch oven to 450°.
  2. Melt butter in oven-safe pan or directly in oven.
  3. Cut potatoes in half, lengthwise (or fourths if desired).
  4. Place cut side down in hot butter and bake for 25 minutes.
  5. Turn potatoes and cook an additional 15 minutes.
  6. Remove from oven, sprinkle with salt, cayenne pepper and parsley.
  7. Serve hot.
