I've had this griddle for several years now. I love it. Use it almost every day. Use on stove top and in the oven. Preheating helps.

You are right it is the PRE heating on low beforehand. Cast iron ddoes not warp.

Bought this a while ago, I don't recommend it at all. heats unevenly like everyone else says and warps when hot. Tried returning where I bought it, they wouldn't take it back after I used it. Tried contacting Lodges customer service and they never replied. Don't waste your time or money.

Pre-heat this griddle for 15 minutes before cooking (low setting) to allow the cast iron to distribute heat properly, get it well seasoned prior to use (there are many methods to this), and it will perform better than you expected.

I only own Lodge cast iron and have been very pleased. Lodge makes quality products that will last a lifetime.

I have not been able to make a single successful batch of pancakes on this griddle. It heats unevenly on the largest gas burner on my stove. The pancakes are unevenly cooked on the same side. I'm going back to my old teflon coated griddle.

I like to grill crusty rustic bread on this because it is so easy to use tongs to flip the bread over. I coat bread in olive oil and it doesn't stick. Have also fried bacon on it, but eggs work well too. It's more versatile than it looks.

I own a number of lodge cast iron cookware including the P12SG3 griddle which I have had for two years. I am happy with all but this griddle. It does not heat evenly and causes foods such as fried eggs and pancakes to burn on the area closest to the grill center. I use it on a three and three-quarte inch gas burner set at low to medium.
